  • 1-2 eggs
  • 1 tablespoon of lemon juice (can be replaced with vinegar or citric acid)
  • 1/4 teaspoon salt
  • 0.5-1 tsp. Mustard (if you want "Provence")
  • pinch sugar, pepper

Important! For better mixing, all ingredients should be the same temperature. Or, before cooking, put everything in a refrigerator for half an hour, or hold all the products in advance on the kitchen table.

Eggs should be broken into a tall, but narrow glass (with a diameter slightly wider than the blender head), add lemon juice, salt, sugar, pepper and mustard and beat. Use the mixer will not work - the mixer beats the eggs into the foam, and the blender - it mixes. Blender set to the bottom capacity and include. When the mass is mixed, add the oil - first very slowly, drop by drop, then - in a spoon, then pour in a thin stream. Move the blender up and down to drive the butter. If the mayonnaise came out very thick - add 1-2 tablespoons of warm water or milk and beat again.
